    Oh, I LOVE my immersion blender. I have a Ninja, and I use it most often for making homemade coffee drinks! I combine half a mugful of hot coffee, half a mug of warm milk, a teaspoon of coconut oil, and a little brown sugar or pure maple syrup, and blend it with the immersion blender till it’s nice and frothy. It’s the ONLY way I drink coffee anymore. :) Plus the blender is great for making creamy tomato soup from scratch, applesauce, and it crushes ice like a pro!

    I second everything on this list (even if I hardly ever use my mandolin since I have to stand on my toes and root blindly in the top shelf to find it). I’d also add rice cooker. It also cooks spelt, millet, quinoa…and makes one pot pilaf or home-made rice-a-roni.

    I love, love, love my immersion blender — I use it mostly to blend soups — so much easier to do it in the pot than try to transfer hot soup to a blender. I have a Braun that also has a whisk attachment that’s perfect for whipping cream. It also has a mini food processor attachment that works well, but I don’t really use that since I already have one.

    My one must-have kitchen gadget is my Pampered Chef apple slicer/corer. I eat an apple every morning and have limited hand strength. All I have to do is center it over my apple and push down and voila! Ten perfect slices with no core. It’s also invaluable for making quick work of apple pies which I make often!
