Green Bean Casserole
This easy Green Bean Casserole from scratch has all the delicious flavor you love, with no cans. Enjoy a healthy version of this classic recipe, with fresh green beans, hearty mushrooms, and crunchy french fried onions.
Ingredients
- 1.5 lbs fresh green beans, ends trimmed and cut into bite-sized pieces
- 3 Tbs butter
- 12 oz white mushrooms, sliced
- 1/4 tsp ground black pepper
- 3/4 tsp table salt
- 3 cloves of garlic, minced
- 3 Tbs all-purpose flour
- 1.5 cups chicken broth
- 1/8 tsp ground nutmeg
- 1/2 cup heavy cream
- 2 cups packaged French fried onions
Instructions
- Preheat oven to 400F.
- Set 4 cups of water to boil on the stove, and trim beans into bite-sized pieces.
- Place them in boiling water for 4 minutes to blanch them.
- Drain beans and then place in ice water to stop cooking. Drain the beans again and set aside.
- Melt butter in a large skillet. add mushrooms, salt, and pepper. Saute until the mushrooms start releasing liquid. Add minced garlic and saute for 1 minute.
- Sprinkle the flour over the mushrooms and gently stir until they are coated.
- Add the broth, stirring constantly, and allow to simmer for 2 minutes.
- Add cream and nutmeg and bring back to a simmer.
- Cook gently for another 5-6 minutes until the sauce has thickened slightly.
- Mix the beans and sauce and place mixture in a 9x13 casserole dish. Top with french fried onions.
- Bake at 400 for about 15 minutes, until sauce is bubbling and onions are just darkened.
Notes
Make-Ahead: This can be stored in the fridge for up to 24 hours without the onions. When ready to bake, top with the onions and bake as described above.
